This gastronomic project was conceived by Trigo’s owner and Chef Victor Martin and his wife, Noemi Martinez, who is responsible of the administration and the dining room attendance. Victor Martin (Leon, 1972) is an enthusiast of his native land’s traditional recipes. Trained in the Colleges of Tourism and Hospitality in Madrid and Santiago de Compostela, his professional experience has seen him work alongside one of the greats of the Spanish gastronomy, Santi Santamaria, in the kitchens of Raco de Can Fabes, Barcelona (3 Michelin stars) and Sant Celoni, Madrid (2 Michelin stars). Victor’s success in every plate owes much to his work in Santander or Galicia and him learning in the restaurants Abac (2 Michelin stars) Rucula or Fonda Sala, all in Catalonia, where he enjoyed learning from their great chefs. Noemi Martinez (Leon, 1972) she is in charge of the service efficiently, assisting the client in a deserving and very discreet manner. Alongside them a young and able team whose aim is to achieve the client’s total satisfaction at the end. |
